I received a Christmas present of this super cookbook, Nevin Maguire's Midweek Meals from my 10 year old😊. Dinners are often the most challenging meal of the day for many families, especially those with fussy eaters so I like how it focuses on dinners only.
I found it a great cookbook to use with my boys cooking. They often selected a recipe and we cooked lots of dishes including Spaghetti with Prawns, Salmon and Mussels, and Roast Chicken Red Curry with Sweet Potatoes (and replaced the kale with broccoli). Many of us cook the same dinners repeatedly, so it's a great way to help expand on the usual dinner options.
I would highly recommend this book as it includes lots of plant based ingredients, as well as animal proteins (such as meat, fish and chicken), for healthier recipes.
